Holiday Blend

We have recreated this medium roast blend every year since 1980—forty-four seasonal blends made from the same three origins: Nicaragua, Colombia, and Sumatra. Never exactly the same, because climate, weather, and even volcanic eruptions create unique growing conditions from year to year, but always the perfect complement to the decadent foods of the holiday season.

Tasting Notes

Dark chocolate at first sip, followed by a hint of cedar, and ending with a ripe plum sparkle. A medium roast crafted to enjoy on cool mornings or paired with rich, traditional holiday foods.

Origins

  • Colombia: Dark chocolate notes from beans grown by Finca Agroberlin in the snow-peaked mountains of Sierra Nevada de Santa Marta.
  • Sumatra: A hint of cedar derived from the dense tropical forests of the northern Gayo Mountains.
  • Nicaragua: Bright, lively notes from Jinotega in the heartland of coffee country.

The Holiday Blend finishes with a ripe plum or raisin sparkle and a long, wet finish—an ideal pairing for all your holiday feasts.

Coffee to Water Ratio

Using the correct amount of coffee will ensure that coffee is brewed to strength, without over-extracting or under-extracting. Experts recommend 2 grams of coffee for every fluid ounce of water used to brew. Weighing coffee is the most accurate way to measure the dose. If a scale is not available, use 2 heaping tablespoons of ground coffee for every 5 ounces of water.

Grind Size

Producing the correct particle size in ground coffee is one of the most important steps in brewing. A finer grind will produce a more intense brew, while a coarser grind will produce a lighter brew. A grind that is too fine can result in an over-extracted, astringent cup, while a grind that is too coarse may yield a weak, under-extracted brew lacking flavor. In pour-over methods, grind size also affects the rate of extraction, as water passes more slowly through finer grinds and more quickly through coarser ones. Burr grinders are strongly recommended over blade grinders.

Water Temperature and Quality

Water temperature dramatically affects flavor extraction. The optimal brewing temperature is 200–202° Fahrenheit for best results. Always use fresh, clean, chlorine-free water.
